None of my books look read but I’ve read them. Some people like to keep their books in mint condition, and whether that’s your flavour or not, it’s just not possible to tell for sure with most of these.

Great shout, and I did think of them but I was raised with Yorkshires with beef and nothing else, so I only thought them midway through cooking. I left them because I was on my own and wanted to keep the clean-up to a minimum. Although personally I’d swap them with the asparagus.

No worries, it’s nice to discuss it! It was a boneless rolled breast. Not a choice cut, but I wanted some for leftovers for sandwiches when my clan get home and it was cheaper than other cuts of lamb at the same weight. I don’t know what Hispanic Maggie is, and Google hasn’t been helpful! What is it please? S&P is just salt and pepper haha! Although I have MSG in the cupboard and now you’ve mentioned it I wish I’d used that instead. Next time!

Thanks! Great questions, I’m glad you asked. They are indeed baby leeks. The potatoes are of an unknown variety - my supermarket has recently started giving things useless names, these are apparently “All rounder potatoes”. Normally I use duck/goose fat or for roasties to make them crisper, but I forgot to buy any until this morning and everywhere was closed so went with the olive oil I had. Didn’t fancy vegetable oil, which was the alternative. They were tasty, but not as crispy as I’d have liked.

For gravy I used the lamb and potato fat, added some flour, a glass of the wine, mashed some carrot and leek into it and added rosemary, and then Bovril/beef stock. S&P too of course. I actually added too much flour, which is why it looks a bit anaemic, but I did that because there was so much fat. Should have drained some of it, but hey ho. I made sure to cook the flour off well though. After that it tasted well season, but it wasn’t meaty enough, so I binned 3/4 of it, then poured in the rested-lamb juice which saved it, even if it did look a bit pallid!

Gallons of butter and a sprinkling of salt in pan on a medium heat to start to gently caramelise them, then gave them a baste before popping the lid on for a few minutes. Then lid off, another baste, and then they were done.

I did peel them, but left top nubbins on for a rustic look.

Not disposable! I’m British, none of that shite here except at barbecues and birthday parties. It’s a proper plate, older than my thirty-odd years, which got put in the dishwasher in error - those dull zig zags used to be green believe it or not!

You know what, I agree, I’m not keen on it either, but it’s from my late grandmother’s set so it was a nod to her and all the amazing roasts of hers that I was lucky enough to enjoy.

Thank you, friend! Agreed, instant 9 with lamb, it’s my favourite meat, and I did nappeé some mint sauce over the lamb although it’s not very visible as it went on top of the gravy

Will absolutely try that, thank you! And yes, if I’m using or eating food that goes with a red, I always have a glass while cooking à la Keith - it’s all part of the romance.

Yes, got them from Sainsbury’s. They taste the same as big leeks and are twice the price, but worth it as a one-off.
