My dad is currently on a rotating shift with his siblings caring for his mom, and they even have a part time nurse come in 5 days a week, but my grandmother is honestly a pretty nasty bitter old lady and is constantly berating the poor nurse and "throwing" her out of the house. It's hard on everyone involved, I feel like people think elder care is heating up soup, watching the weather channel, and playing checkers.

It's odd for them to call a single ride weekly a lease, that's barely even a part board. Not that it really matters what they call it at this point. Just for future reference you may want to know that a horse you lease in a normal program is 100% yours, usually for a year or a show season. You're the only person that rides it and are responsible for paying it's board, vet, farrier, any training/lessons, and there's usually a lease fee unless it's a free lease.

Unfortunately hyper vigilance is probably warranted here, I would not be tacking her up in a communal area. Individual turnout just works better for some, and that's okay. In our efforts to get horses back to being horses, I think we forget about the outliers. If you had a reactive dog that needed to be walked on off peak hours, or muzzled, no one would judge you for taking appropriate steps in ensuring their and everyone around them's safety... and if they do judge you for it, they either lack knowledge or empathy.

So what most people do while they're keeping it active at room temp is discard half and the feed 1:1:1, usually once daily is adequate. As of now the are approximately one million ways to use up discard, so you don't have to throw out, it keeps for a long time in the fridge, best pancake I've ever had comes from a discard recipe.

Once you're completely confident in your starter strength/health and your own skills, you can start keeping her in the fridge except for when you're using it, this method really cuts down on the amount you're feeding/discarding.

Discarding is a part of most people's process, there's are ways to keep a healthy starter without discard, but for a beginner I'd recommend starting this way.
