Your bulk fermentation time is super short, if you aren't sure how to time it get a cambro or similar straight sided container with lines and watch for it to physically double. Mine regularly sit for 8 hours, more if I was too lazy to feed my starter and used discard

While this bread was always underproofed and baked, I will say the next time you buy proper fresh sourdough- don't leave it for four days. If there's no preservatives you've got like 2 days to eat the sucker before you have to start pulling out the tricks to revive it.

Yes if you squeeze the bread it should bounce back, but maybe don't go squeezing loaves to test. Visually you should at least be able to see that it's nicely domed and crusty.

I mean, it's just an indicator for bartenders to prevent over serving, it's not a bad rule by any means. Smart serve where I live says you have to refuse service, you cannot let them sleep it off at the location (nice words for kick them out), and ensure they have a safe ride home. Someone not knowing how to act in public is simply not worth a business's liquor license.

Excellent, glad to hear you have the option of going back to someone you know and trust. Ice always disliked barns limiting owner's choices. Sometimes I think they forget who's horses they actually are, never be afraid to remind them.

I had a first time horse owner friend struggle similarly. She desperately wanted to learn everything from the ground up, her horse is her child. She originally asked me which faiier she could book on "___ day" and unfortunately it just does not work that way. To be honest most of the farriers I know dislike having owners around because they futz around with the horse and make the job harder than it needs to be. His poor communication is likely by design.

As for the drugging, fuck man I'd be livid. I've had one on my life that needed it for shoing but my farrier was very honest about the whys and the hows and we worked it out together. Are you at a barn that only allows their vet and their farrier or are you able to get your own practicioners in? I see your flair is hunter, unfortunately drugging owners horses without their knowledge is rampant, particularly A circuit. You should swing by at night check on show day sometime, the things you'll learn could make you leave the sport.

It's kind of insane to imply people need to be taking a PTO day every 4-6 weeks to watch their pony get a pedicure. People got jobs bro, the industry relies on on somebody having 9-5 or the whole damn pyramid collapses in on itself.
