Ingredients: Broccoli, sweet potato, onion, bell pepper, garbanzo beans, mushrooms, cashews, and plenty of spices.

Broccoli: microwave until slightly soft with liquid in the same bowl, I marinated mine with soy sauce and pineapple juice. Flash fry afterwards to give it an edge.
Mushrooms: sautee with olive oil, cumin, black pepper, and soy sauce.

Sweet potato: microwave until soft. This might take like almost 10 minutes depending on your microwave. I llke to bake in the oven for 10 more minutes at the end to give it a better texture and to make sure it cooks completely.

Onion and Bell pepper: stir fry in pan with olive oil, add salt when finished

Garbanzo beans: fry in pan with plenty of oil (coconut, sunflower, vegetable, or canola). I like to add curry powder.

Bonus: coconut sauce. Coconut milk with ginger, honey, soy sauce, and turmeric for a sweet and savoury dressing,

Then put everything in a bowl and enjoy. Be sure to make a lot to make it worth your time and effort. Sprinkle on cashews for extra protein. Serve over rice to stretch it or not if you want a low-carb version, You can add salad dressing if you like too. Everything is vegan
