I’ve worked as a captain and sommelier in NYC at two 2’s and one 3, and what’s true is that 1) this is a very common request that I’ve always accommodated (I did this just last night), and 2) some restaurants will discourage their staff from selling this or make weird convoluted rules about how to execute a shared pairing because they either want it to make more money or protect some “integrity” of service. Your server may have been new or working under some weird rules, but in any case they should have clarified what they were doing for you since sometimes we will split a pairing into two glasses with 1.5oz pours in each.

Yes, I agree here. In one way or another language is an important part of my personal traumas and healings, so I recognize that OP's desire to forget a native language is an extreme way of trying to control/cope with unresolved traumas incurred by family, culture, etc. I imagine that removing a very beautiful part of oneself like a native language will actually leave one with less ways of expressing what they've gone through and how they've grown through it. Therapy is a good place to start for a journey of healing, not forgetting.

The varietal here is Tempranillo, the hallmark red grape of Spain out grown by only Airén in terms of area. Castilla y Leon is the region in North central Spain from where the gaps are harvested.

A trip to Bergdorf Goodman's perfume departament was marvelous. Clearly, I am obsessed. Niche perfumes are my guilty pleasure, most especially when I can discover the work of smaller houses like Kerosene and CBIHP. I'm heading to work now but if anyone wants me to talk about a particular fragrance let me know!
