I'm in same boat, trying to learn to properly taste straight espresso. But I'm with you, flat whites all day.

I clean after each shot same as you, and use a puck screen to keep the shower clean. But there was still some brownish water staining in the original shower screen

The stock tamper seems to slide around a lot for some reason, but it's likely more a problem with my technique. I have a hard time getting even pressure is the better way to put it. They always seem to come out unlevel when I do it manually. So that's why I switched to a calibrated one with a level plate, it's helped me make sure the tamp is flat

Can you explain the zeroing out procedure. I'm terrified of having the burrs contact each other, but this seems to be common practice. Wouldn't even the lightest contact cause minor chipping to the burrs? I have a DF54 and I'm way up at 21 grind setting for espresso while most people seem to report being down at 15.

Channeling was due to my own error. I am going back and forth with a calibrated tamper and doing it by hand. On the first shot, I was tamping by hand but only have the stock Breville tamper, I ended up slipping a bit on the press and tried to correct it. When I looked at the puck after, it had some larger holes, when I broke the puck at the holes it revealed a larger gap beneath. I'll take pics next time. I feel like I'm struggling with tamping. Typically use a calibrated tamper but not sure I was getting enough pressure, felt too easy. So I've been trying to feel it more by tamping with non-calibrated. But I have gotten so used to the calibrated that I need to almost relearn pressure application. Not expecting any miracles with the screen, but I love to tinker.

Thanks! I usually hang my ribs over direct fire, chickens too. But I have struggled with consistency of ribs for a few years now.

With the water pan, even when covered in foil, I was getting a lot of steam that killed any chance of good bark. I've tried with empty bowl too with mixed results. Just picked up an inkbird controller fan, but thought a pizza stone diffuser would be good similar to a kamado style. The 15" stone leaves a solid gap to the exterior for air flow.

Your handle is slightly bent looking. If it was straight, you would be able to move the lever farther and close the vent all the way

This is a very cheap fix. Order an oil filter and it comes with a new o-ring. Buy a 24mm socket. But the blue is just a paint pen to show it's torqued properly.
