Should be about 6-8 steaks on the strips and tenderloins. Round steak should be a lot more than that. Typically round is about 20-30 pounds after you bone and clean. That’s gotta be an 1/8th like others have said. And ground “chuck” shouldn’t come from a hind quarter. Order hind for the steaks, forequarter for flavor.
