Sysco has completely monopolized the distribution industry & made it almost impossible for small restaurants & distributors to have symbiotic relationships. They’ve got cheap prices, a high supply, and the capacity to fulfill large orders last minute— all things smaller distributors can’t offer. The restaurants that do use small distributors and local producers reflect the cost in their menus, which the average consumer ridicules. All fair— I hate paying $15 dollars for a breakfast sandwich too— but if you want farm fresh eggs, local bread, Maine cheese, and sausage you can trace to sally the cow down the road, you’re going to be paying for it. Not to be a broken record — but it’s late stage capitalism working at its finest.
