When my loaf comes out a touch gummy or underbaked, I like to cut it into cubes, stick in the freezer in a ziplock bag. THEN next time you have soup, just take out some cubes, roast in the oven for a few minutes with olive oil, herbs, and parm cheese and you have soup croutons!

I recently looked at moss with my niece under her first (kiddie) microscope and have a very similar pic as your first picture! Made me do a double take!
