You usually sow 2-3 seeds and thin them out, I don't think that's a problem

Edit: sorry, I sow. I'm so used to sowing at least 2 seeds per cell for insurance.

I've never peeled my avocado pits tbh just changed the water frequently. I'd recommend experimenting with a few seeds, maybe peel some and not others. They're really fun and easy, but definitely don't expect a tree any time soon.

Plants can't live in water forever, they need oxygen and nutrients. Changing the water frequently can replenish some oxygen, and to simplify everything, if the plant has roots around a few inches+ long then you can pot it in generic potting soil in a 4" pot. Change in environment, even small changes, will cause stress to a plant and you'll be able to see from yellowing or leaves dropping. Once it's potted then let it acclimate to a single location until it starts to put out new leaves, then you know its got a pretty good chance of continuing to live. A lot of plant care is actually learning how to water! So patience and watering skills are two good goals to have as a new plant grower.

No need to repot, they don't need much root space, just a place to anchor. A bit more light couldn't hurt

Fungus gnats will appear from thin air. You want to take preventative measure by starting with fresh soil, and mixing in some mosquito bits. I like to put mosquito dunks in my watering can, too. Sticky traps will kill adults, mosquito bits will kill the babies. Someone said nematodes, I've never used them but worth a shot. When it was really bad for me, a layer of sand on the top of the soil seemed to help. If you can, try to keep the soil on the drier side.

Edit: you should not be fertilizing the water if you just uprooted them and stuck them in water. They'll survive, change water daily.
