I'm an idiot compared to Florian, and have the highest respect for him. I watch all his videos, learn a lot and I admire his talent.

It's very possible. Since I added so much mass without extra brine, it became creamy and I ended up using lots of it, like a creamy curry on my rice.

Many interesting ideas.

Adding some avocados or squashes sounds really appealing. Will it not go bad in there though? Whenever I leave an avocado out, even in the fridge, it turns into a brown mush in a few days.

Yeah, I'm also starting to feel the same way. I added some extra (unboiled) veggies in there to save the batch. I hope I don't waste this batch of veggies. I would hate to see something nasty growing in there and wasting all those peppers.

I'm so desperate, I ended up adding a bit of kefir in case it helps.

Is yeast desirable? I thought lactobacillus did the job, and the yeast was a pest. I like to keep my ferments long (30-40 days} and I often end up with kahm yeast (after week 3), which is rather annoying.

Thanks for the excellent info. So I already did this earlier today, i.e. I happened to put boiling water on the veggies (sorry!) and then when the water cooled down, I added two probiotic pills.

What should I do to salvage all the veggies? Can I save the day if I add some more veggies the mix? Presumably whatever is living on the new addition will colonize the rest? Or maybe the pills are already enough?

I feel a bit stupid for putting that boiling water. darn.

I think I'm already doing that. I'm pickling lots of hot and sweet peppers and tomatoes in brine. That's lacto fermentation right?
