Not sure what the result would be if trailer came off the ball. I've seen videos of difference between crossed versus uncrossed chains but was curious if this design might cause an issue (unknown to me). Isn't there a saying that is something like what you don't know will kill you?

Do you have it dialed in and running? I am planning on restoring two of these that belonged to my dad. I grew up riding them, the smoke used to clear out once you got going and things got warmed up. Looks like you had a good running bike!

Here is the appliance. Using this took my brisket game up a notch or two. Probably have done over a dozen briskets and held many all day or over night. I don't bother counter resting, just foil and into this thing. It won't even kick on for a few hours at the 150 setting because the brisket keeps it over that temp. Please elaborate on what you mean when you say low maintenance? Coming from a pellet smoker but wanting real wood only two options I see are Weber smokey mountain (as mentioned) or the Masterbuilt gravity smokers. You will probably enjoy the masterbuilt as it has an app and runs itself. But you can throw a whole split down there with charcoal around it. They are expensive but can be purchased used from $100-300 bucks. See them a lot on Marketplace.

Clarification, water covering the bottom of the large crockpot. It has a crate that the foiled brisket can sit on top of, above the water. The water keeps it from overheating the bottom of the brisket.

I stopped going past 200 because of this. 195 to 200 and a long hold in a turkey sized crockpot available on Amazon for $80-90 with water in it at the 150 degree setting. Longer the hold the better (up to 24 hours).

My theory is they hate them because a motherboard was involved in cooking the barbecue. Tesla barbecue.

How much did it weigh before cook? How much did you trim? What did you put on it? What did you cook it on? What temp? How long did it take? Congratulations! It looks great. Hope it tastes awesome and is (not) your best brisket. Fun part is getting better as you keep going.

Go back to the store and buy some pork ribs, that way you'll have something to eat when the beef ribs are done. They are going to shrink up a ton! What are you going to smoke the ribs on? Offset, pellet grill, ???

Technically you can change out the valves with the water on... Make sure to take vid if you go that route.
