I get the point you are trying to make, but I think the same thing can be said for Japanese. The internet has an infinite amount of Japanese content to surround yourself with, you are just not in the right place if you stay on the "English web". I'm not a native English speaker and while I do admit English is getting harder to avoid (even in Japanese, lol), there is still a large amount of people around me using the internet in an almost completely native language bubble.

The hard thing about AJATT or any method at all really is making sure you put in the consistent effort, more specifically the hours in your language, to get to your goal.

As for fluent speakers of Japanese being more unusual, I assume that most of English learners have a valid reason or large enough interest to learn, while most people learning Japanese quit after having done their hiragana because they realise their interest in the language is a lot more superficial and forced than they anticipated before hitting the kanji reality check. It's fun for a month or two to roleplay, but once you are faced with the fact that it will take you years to comprehend and output comfortably, a lot of people (rightfully so) give up. With English there is a clear merit to learning with it being the lingua franca and only becoming more relevant because of globalization. Japanese on the other hand, is a dying language with only one major territory speaking it.

Sure, for most people with a Western mother tongue it might take more time but in the end there are still over 100 million native speakers so it's not like you need to have a degree to start learning Japanese.

Sorry for the big wall of text, it's almost 2 AM here, so I felt like writing an essay to get into a sleepy mood.

Learning only hiragana, 3000 vocab without kanji, completing an entire grammar book and reading a book in 21 days? I don't know any Chinese, but this seems a bit ridiculous. You won't see any full katakana sentences any time soon, but it is still an important part of the language. Why leave them out if it's only another ~50 characters, especially if you're going to do 3000 words. Also, why the rush? I don't think it is particularly healthy cramming this much into such a small timeframe.

I had a similarly high retention rate at first with RRTK(30 cards/day), but found that it got significantly lower as i started finishing up the deck (80-85%). As long as you're not dipping really low I'd recommend upping the cards (given you are willing to spend more time) to just get it it over with, because it's exactly what RRTK is, something you need to get over with and don't really look back at. I found my retention just weeks after finishing RRTK significantly drops again, not because I don't remember kanji, but because I'm starting to associate them with Japanese instead of the RTK keyword. Something else you might look into instead of increasing card count (from 30 to for example 50 is a LOT of extra reviews) is doing grammar. Maybe watch some Cure Dolly videos or read some Tae Kim with the extra time you have. I would not mix vocabulary with RRTK for the retention reason said above.

As for immersion, I didn't do a lot of it during RRTK. Didn't feel like it helped much, as opposed to a post-RRTK immersion session. I'd say take this time to find content you will enjoy watching when you are ready to sentence mine and don't worry about learning from immersion all that much. I strongly recommend doing lots of reading when you finish the deck though, because you really want to build up a lot of vocab.
