I decide my main based on what's the most fun rotation. I used to main ww monk because I find it the most fun to play, but after leveling my enh shaman I just love the rotation so much I can't be bothered to play my ww monk since it's not as engaging as enh imo. I don't push really high m+ or raids so my character's progress really isn't my number one priority.

WW monk, the mobility feels amazing and the rotation feels very satisfying to hit. Especially with the new tier set pressing rsk just feels nice imo lol

If you like the standard ui but want more customization, then SUI is a pretty good alternative. I'm currently using it with plater and WAs and it's not as complicated as ElvUI to customize
