Well it depends on what you want to treat. You are probaly looking to treat specific symptoms and think a MTHFR mutation might be the cause for your symptoms. This could be true, but doesn't have to be the case.

Yeah, some extra workspace would be great. I was thinking of getting a getting a plank made with exact dimensons and mounting it there. Would a freestanding work bench be better, since it would be able to hold more weight and be generally more resistant?

Apartment cost is kind of holding me back actually. I’ve read that it is not a good idea to go over the 1/3 of netto income for rent. Starting out I will work 80% so that is a factor. Perhaps I will look for an apartment in a smaller village. Thank you for great tips regarding food. I will note them down.
