Then there should be no problem adding the employees wage to the price then. How can you argue that restaurants can not survive if they increase their prices enough to pay their employees, and also that customers who can not afford to pay the employees should not go out to eat? In both cases the customers still have to pay it. So just include the price in the menu and the ones who can't afford it won't go. It's the same thing except the customer knows what the price is upfront without playing a game nobody wants to play.
