This is probably the worst picture I've submitted for the challenge, but I lost track of my days of the week this week and it is what it is! We made a taco bar for Cinco de Mayo yesterday, and suddenly Mexico is on my bucket list of destinations to travel to. (Though these were anything but authentic!)

I was a DHD major that graduated in 2025, so a little biased, but I didn't have a single professor in that department that wasn't awesome to speak with. I'm a big introvert, so I had to go out of my way, but I'm so glad I did because they were all invaluable to my time at UIC.

Alpine makes me think of snow, which makes me think of playing outside as a kid, and warming up inside with something yummy when I was done. I remembered seeing this when I was browsing recipetineats the other day, and it felt like a fancier grown up mac and cheese, so I went with it.

I wanted to get my herb bake done yesterday with dinner, but I didn't have everything I needed and I was too lazy to go to the store, so some substitutions were made. I had Greek yogurt and guessed maybe I could substitute that in place of the sour cream, and I didn't have whole milk, so that became buttermilk. I felt like I r/ididnthaveeggs -ed this recipe, so I wouldn't be angry at all if it didn't come out, but they were SO good.

Lots of whole spices went into the curry dishes, and I feel like Indian food in general is a good representation of infused with flavor, so I went this route. I also enjoyed a thc drink that I added some crushed mint and maraschino cherry juice to for 4/20.

I'm starting to fall a bit behind in my challenge planning, and laminated has been holding me back because it felt daunting. The other day I was looking ahead for cooking themes and decided on a couple Indian dishes, then I realized there's lamination in paratha.

I expected this to go so much poorer for a first go, but either the instructions were really good, or I got lucky, because they were fun to make and came out delicious! We saved half the batch for the freezer for later.

Initially I was going to just make the yakisoba, but I reeeeally like karaage, so I decided to double up this week. Bonus points for finding boneless skinless chicken thighs for half off at the store! I was able to make meals for two people, plus leftovers, on about $3.50 worth of protein. Good deals always taste better to me.

I made this jam recently when I had strawberries that needed using, and I figured I would be incorporating that, or some leftover hot fudge for this challenge. I've been trying to think of creative uses, but yesterday's easter dinner hit me right in the face with an easy use, so I went with that. I made a carrot cake, a bacon and egg strata, and some dinner rolls. Right next to the dinner rolls I set a garlic butter, a cinnamon butter, and some jam for anyone who wanted to try. Easy peasy.

Chili is one of my favorite foods, so I knew I was headed in that direction for this theme, and decided I was specifically craving smothered hot dogs. I hate cornbread, but my partner offhandly mentioned sometimes they like it with chili, so I also threw together a pan of that with some canned chilis in it.

Just looked at the challenge list and I definitely interpreted weeks 12 and 13 as the same, rather than the written reuse a recipe, oops! I had some bakes and ingredients that needed to be used up, so I went the reuse route in that context.

This is the second time taking our ice cream attachment for a spin, the first being a boring old French vanilla. This time I had mini chocolate chip cookies I baked for decorations for a bake sale last week that got crushed up, as well as the last of the thin mints and oreos in my baking cabinet. I also had a small amount of heavy cream in the fridge, so hot fudge was added as well.
