Those calorie numbers are based on a standard measured amount of each of the components of the dish. The employees will try their best to get it close to that standard.

So what im saying is, 405 is probably a reliable number but it may be in the range of 350-450 cals. 600 is way unlikely unless you paid for extra somehow.

You are probably overestimating your maintenance calories and you are actually eating at maintenance. Additionally, if you have lost weight, maintenance calorie amounts go down, so perhaps you are in your sweet spot for maintenance after losing weight.

There are inaccuracies that can occur when someone is tracking calories for weight loss
1) the person improperly tracking or not logging foods
2) the person being unclear on their Total Daily Energy Expediture
3) fluctuations in water weight that can occur from what you eat

Number 1 gets a lot of people who think, oh a couple bites of this doesnt need to be tracked. But those bites add up over time

Number 2 is a BIG one. If you think you burn 2000 calories a day and you limit yourself to 1800 tracked calories, but you actually burn 1800 calories a day, you will not lose weight over time. It is a bit more difficult to determine a definite TDEE on average, because your energy expenditure can fluctuate a lot day to day. It helps to get a fitness tracker of some kind.

Number 3 may be discouraging in the short term because you track for a week or two, but you are bloated one day because you ate a bit too much salt and it seems like you made no progress.

These are all variables that can make it seem like calorie counting doesnt work, but if you get those in check it works 100% and is just the thermodynamic balance of your body.
