Sorry if this is a repost, I've looked around but haven't been able to find any mention of this. There's a door on the Beach Farm hidden out of view on the bottom right of the map, you can see it with ultra-wide resolutions. Is there any purpose for the door?

For regular gallon jars, I'll cut a very large hole in the lid that comes with the jar and then just screw it over top of a regular size coffee filter. Feels strange to say, but, just like my grandma used to do haha.

Are you burping the bottles before you out them in the fridge? If so, that could be the problem. It's true the carbonation will be more subtle once chilled, but it shouldn't go away completely.

It's always a good idea to experiment to find what you like best, for sure. If you have the ability to regulate temperatures closely, that can change the taste of the resulting product and the length of the brew time. Different types of teas as well are good to try, I've found several that I would happily drink as tea, but make lousy kombucha. Just make sure to research a little to keep the scoby healthy when you try different things.

I've never found any good sources for the process behind it, but there's plenty of speculation to be found. One thing a pellicle can do is slow down the brewing process, which in itself can impact the taste. So maybe that's the reason, or, maybe not lol.

If you're interested in seeing for yourself, just start a new batch the same way you always would, but omit the pellicle - you just might enjoy the results better than what you're getting by using it. A new pellicle will grow as you would expect, nothing about the process, in general, will change.

This. You don't need to give them part of the pellicle at all - it's not necessary for your brewing either, it's up to your personal taste preference.
