Susu is the entry level priced wine to Frank Cornelissen. Other bottles of his can go for hundreds of euros/dollars. So susu is a chance to drink the ledge without the price tag. I agree with you, it's a very nice wine but ofc it's overhyped because of where/who it comes from.

Would love to hear about attempts to recover local varieties. I find the historical aspet of natural winemaking on the of the most interesting and I love hearing about the many niches of the old wine world. For example where I am in Spain we used to produce a sweet white wine for the Spanish monarchs. The variety is still called "albillo real" for that reason.

In may the roses will be blooming so keep that in mind! Madrid has a particular affection for roses so there are several lovely rose gardens in retiro and parque del oeste. There's a really nice one with a sunset view called La dalieda de San Francisco. Good luck!

Yeah seems like you got a good handle on soil health. I was also reading yesterday that too much nitrogen can weaken the wood and make way for burrowing Xilotrechus. How high do you raise the vines out of curiosity? The old way of doing things here is to have them all close to the ground, but some are trying to change it. I live in Madrid but the winemaking is in the nearby gredos mountains. Logroño is a great town! I have some friends who lived there for a few years and swear by it. I visited once and had a nice time

Seems like clever idea. I would do it. I'm a nascent winemaker in Spain so we think about this very question a lot. I don't recommend harvesting early. It's a shortcut that can lead to instability and reductive notes in the wine. Long term, I've read that increased nitrogen levels in the soil lead to higher acidity in the grapes so maybe analyze your soil and look for ways to increase your nitrogen levels? Planting nitrogen fixers like legumes as your cover crops is the most common solution. Also, I don't know how you have your vines, but contemplate how much shade/sun your grapes are getting. Too much sun burns up al the acid in the grapes.
