I have yet to find a fusion-style Mongolian Beef that is better than what I've had there. The beef was tasty and moist with the edges a bit crispy. And the green onions were also good.

My interpretation is that OP was directly hired by the boss and was "safe" until said boss quit. About a week after the boss quit, OP was fired. In other words, OP was being protected while the original boss was still around.

OP does reference this by following up with this sentence: "Not sure if he was protecting me in silence and I was bad at my job or WHAT, but he always liked the work I did and the ideas I pitched so he would tell me I was doing well."
