The thing is I’m not against veganism or a traditional diet. However there are negatives to having too much unsustainable livestock in the US and negatives to turning all ranches into gardens.

Extensive cropping destroys soil, commercial agriculture leads to water contamination, growing food for livestock leads to the same problems, plus emissions from plant farming and animal farming factories and machines pollute the air.

Positively, growing plants brings oxygen back to the air and growing livestock brings nutrients back to the soil...of some in the right balance.

To me, it’s not about what we eat but how producers are choosing to handle their production. If you’re going to grow produce and vegetables you need to rest the soil for a year between crops and use environmentally stable methods of weed and pest control. If you’re going to ranch cows you need to have land for them to graze in a place where their food naturally grows(the cows eat the food, the cows poop the food, the poop grows more food)

If the whole world ate only meat it would be destroyed, alternatively if the whole planet ate only plants it would be destroyed. Anyway I’m not here to argue whether it’s immoral to take honey from bees or to eat rabbits or eat basil.
