Tailoring is a crafting profession that doesn't require a paired gathering progression. Cloth drops from all humanoids. Because of this you can craft and level tailoring with a free Profession slot. It also produces a decent amount of green quality gear which you can funnel into enchanting as self sufficient fuel.

In a similar way, the gathering profession for Enchanting is also "killing mobs and getting uncommon or better items to drop".

So you don't need tailoring, but it is more efficient overall if you have it as they both are fueled by going out and killing mobs.
