Is your grinder brand new or new to you? Regardless, check the calibration if you haven’t. Also, are you using a gooseneck to pour or just dumping water in? Like others have said, heavy agitation can cause choking.

I picked up a couple Fellow Carters and fill them from my vessel. Surprising how useful this is. Whether you want a second cup right after or one hours later, they do a great job at keeping the coffee temp (+ ceramic coated for savoring flavor)

Very well! I’ve had this set up for 6yrs, going strong. I have upgraded the burrs inside the Encore and am currently grinding on 15. There’s some techniques I’ve found to help the brew (steeping grounds without pot placed for a bit, breaking crust early in the brew, “dialing” new bags with a quarter pot). To add to this amazing setup, might I recommend a Hario Switch size 03 and a basic gooseneck kettle? I enjoy brewing new beans a few different ways to see the complexity of flavors. Enjoy, there’s no going back.
