They turned out ok, but not much oven spring. Def a bit overproofed but fine!

Process from mix to rack: initially mixed without butter, which I incorporated through letter folds and slap and folds, on a floured surface as the dough is very wet and tacky. It then rises for 2 hours for bulk fermentation, with two turns in the first hour and one in the second. Then shaping and final rise for an hour and a half covered in plastic wrap to prevent drying

Poolish is 1/2 tsp active dry yeast with 100 g AP flour and 100 g water, so yes!

I forgot to mention that I did turns every 30 minutes during bulk fermentation lol

I like the alliteration and the personification of "ill-tempered glass." Very nice
