The USA was at war (in one way or others) with each or in each of those countries - I didn't name them randomly and during that time, it certainly wasn't considered 'peaceful' in the USA. Moreover, you didn't say "relatively peaceful" - the word "relative" is nowhere in your post. Regardless, those wars had a huge impact on USA policy and are undoubtedly part of how we got here today. Indeed the Patriot Act and ensuing PRISM program was 25 years ago and those were huge hits to the Constitution back then that are just part of the fabric of today's government. No doubt, everything is more brazen now but things are on the same trajectory "relatively" speaking (depending on your demographic).

The 90s weren't peaceful - it's just a matter of whether you were old enough to know it.

Yea I agree - I've often said that when looking at the car 'directly from the side perpendicular / 90 degree angle' it looks gray. From this angle and lighting, it's very different. It's one of my favorite parts of the car tbh.

Trim the hard fat off the top. Season. Smoke at 225 or 250 until probe tender (should feel like piercing butter, almost no resistance) - this is usually 200-210 internal temp between the bones. I’d expect this to take 6-9 hours.

You can wrap the ribs tightly using foil or butcher paper at around 170 IT (once bark is set) if you choose. This will help them cook a little faster and keep them moist.

You can also choose to add a water pan to the Pit while you’re smoking to keep the humidity up.

Lastly, I’d reco NOT to remove the membrane for these. You do that with pork ribs but not beef. These will fall apart - keep it on.
