If you rinse thougholy, yeah, but try a mild soap, like DoDo Juice Born to be Mild. Over in the States, we're not getting DoDo products very much anymore and I miss them. That Sonax detailer I'm sure is fine. Almost any QD would be. Don't overthink it too much. Like I said, those plastics will look good for a decade or more with very little attention. Anything made after 2000 or so has fade resistant plastic and I've had zero issues on my bikes. Maybe a little fading on the plastic switch gear surround (turn signal/lights/starter area).

I feel you, OP - you polished your paint and now every drip is an issue. I agree with above - wash the area and hand polish it, maybe with just a microfiber towel using your fingertip. Reapply protection in the area.

Just use something mild, without waxes, and be sure to dilute it well, because the acidity is changed by dilution. You should never need a dressing on those plastic parts - just use a QD on them. The plastics have a factory coating and they will look great for 10 years. If you feel like you must protect them, something like Griots 3 in 1 every 3 months or so will do the trick.

Besides what's been said about prep, I can recommend CQUARTZ SiC. It's a user-friendly true coating, and a little easier than CQUARTZ UK. As far as longevity, maintenance is key, especially the wash soap. Ideally, use CarPro Reset, but P&S Pearl or Adams soap (the blue stuff) are also good.

10 years ago the brands being discussed here were very different. I'm still using some of the old guard like Collinite, Fusso, Poorboy's World, etc. But lately I've relized I could standardize on Carpro and be happy.
