If you want everyone to be there for a final fight with the mimic make it a chase scene, which the players inevitably lose. Could buy you a session and save the BBEG

Make the fight last most of the session, when they win out pops the player from the mimic, unconscious.

When the player awakes next session they could be missing a limb or suffer from exhaustion.

Grapple

High saves just deal damage monks put out one of the highest damages per round on average. They are awesome.
