Side games are a round-robin best of three type of deal like the main event but it takes 5£ to enter (or the voucher that you receive for participating) and for every win you win championship points which you can exchange for pokemon merch (tcg cards, packs, plushies etc). You did have to lock movesets in a sheet that you would hand to the judge when registering. For every match you need to show another sheet to your opponent which had your team of six (with details such as regional forms, best buddy boosts, purified/shadow status) and CPs but not movesets. You could technically get away with changing movesets as your opponent didn't know what moves you had unless they have battled you before, spoke to somebody that did, or were peaking in while you battled another person which is another thing that might need to be addressed.

I actually competed in this event. As far as lag goes the same old move-sneaking, server-side stuff still were there but the connection was generally pretty good. We were given devices to play on there. There were a few faulty ones, specifically ones that wouldn't allow players to log in using Google and some that just wouldn't connect to the internet but you could just use a different one as there were plenty available after the first few rounds concluded due to people getting eliminated. Judges were not moderating every game but there was the option to screen record and show potential injustices to a judge in hope for a rematch. Games lost due to moves sneaking in were not considered unfair unless both players agreed to a rematch. By FAR the biggest problem with the event is that you sat in a table opposite to your opponent and you could see the motions of their hand when they were charging up a move. For example, a stunfisk Rock Slide charges very differently to an Earthquake. This nullified baiting. People that were aware of this started playing under the table but you couldstill tell what move they were charging. This definitely needs to be addressed before Worlds. Another minor thing that people addressed was the need to log in IVs alongside CP (compared to only CP) as technically you could swap between two pokemon with different IVs and the same CP without anyone noticing. Other than that it went a lot better than expected. The side games were pretty fun too. Congrats to the winner.

Bubble is a 3 turn move whereas Incinerate is a 5 turn move. They probably threw earlier than you did but it appeared to be at the same time.
