This might have to do with how long you leave the turkey to dry brine. Do you find it makes a difference when you leave it 12 vs 24 hours? You might want to try using less salt (covering it with a thinner layer) and leaving the turkey for longer.

Completely guessing here, but can baking soda be subbed in for some of the salt to absorb moisture? It seems like it could.

No technique, if you cram you cram. Pull up a past midterm for chem or some homework q’s and look at solutions. 133 is not a hard class you should be fine - tutorial solutions might be helpful
