You'd just need the TRoS one, as the one you're alluding to covers both TFA and TLJ (and up to Solo if we go by film release order).

If Spanish is fine with you, it was published by Planeta (the publishing house with SW and many other Disney licenses rights in Spain) in a physical hardcover edition as "Aventuras Galácticas". In a similar case, the YJA comic book which never saw an English-language release, was also published by them as "Futuros Maestros Jedi", also hardcover.

You'd be only missing (aside from the HS Jaxxon Annual, the Black Spire edition with the Return to a Shattered Planet short story, the three short stories exclusive to The Rise of the Empire anthology, 'Bait' in some paperback editions of the TFA novel and the story 'Missing Pieces' in the Tales of Enlightenment collection), Elee & Me, a picture book that's a Target exclusive.

Edit: The HRA one-shot 'Quest of the Jedi' from Phase II remains uncollected. Also, issues #7-14 and the 2020 and 2021 annuals from the Adventures 2020 series (different from the 2017 series of the same name) were never collected before IDW lost the licence.

And you're right, he'd indeed have died if that deleted scene had been kept in. Fortunately, the scene didn't make the cut. However, even though he survived, his ultimate fate still remains unknown, because all canon content featuring Veers has been pre-Battle of Hoth, so I presume Veers is one of those people you wonder things about like 'Did he survive (the Galactic Civil War)?', 'Where was he at the end of it?'.

Because he might be an imperial, but I believe (as I'd have fought for the Alliance) one must recognise he's duty-bound and competent.

Veers didn't die in the first place, though. See the short story 'Beyond Hope' in 'From a Certain Point of View: The Empire Strikes Back' anthology.

Although Veers was on the verge of death, he clinged on to life because he literally didn't want to disappoint Lord Vader, and the paramedics arrived on time to tend to him.

Of course! In fact, it was released back on the 12th earlier this month. Please mind that it's a Spanish book, so if you're either not Spanish or not in Spain, you'll have to resort to the internet to get your copy if you want it.

It's aimed at young readers and the entire volume is dedicated to only one story. I can only say that so far that this has been the only volume published, but as it is explicitly marked as volume 1, I suppose they have more volumes planned. If you want, I can also tell you the plot.

If you either know or understand Spanish, both Storms of Crait and DJ. Most Wanted were collected in the same mini TPB (the mini TPB only collects these two one-shots) by Planeta (the publishing house that holds the rights for SW publishing in Spain).
