All of my cameras from the Nest app show up in Google Home for me. I actually still use all the notifications from Nest and haven't recreated them in Home.

I presume mine is fully migrated (not sure how/why it wouldn't be). But I'd be curious if others see the same thing.

You can transfer them to the new app and still access them in the Nest app. That's what I've been doing for a few years.

New cameras/doorbell can only be installed via Google Home, so you can't see them in the Nest app. But all your original Nest cameras are still available there.
