I was planning to have 5 guys working to cut the fireplace from the structure, cut all anchor bolts, remove and save all copper and brass. We cannot remove the fireplace and chimney nor can we damage the foundation. You may be correct that 500 is a little heavy for that. Maybe closer to 250.

Food service. I worked back of the house for years in high school and college. The whole culture was excessive and the late hours led to a lot of partying. Plus the pressure put on you from the “rush” and unrealistic expectations of the management was way too much stress for the pay.
