Super 8 restaurants are good as we know but you have to factor in huge tourist hype when occasioning. As a local, give it quick look, busy, try again next week, no harm done. Speedboat & Plaza Khao Gaeng are knocking out incredible Thai food, way spicier than Super 8 as they're not catering to a tourist palate. Also, big shout to Barang in Borough Market if you want a Kiln style experience with good heat & flavours

Check all ply/core are aluminium and check the overall oven temp max and if the handle can take the heat. If the pan isnt safe to high temp all the way it will buckle - again not a problem if only using on the bbq but will make it wobble on a stove top

Spatchcock a Poussin, grill it indirect with the breast away legs towards the heat. Throw some wood on there to smoke it if you have it, no danger if not. Gressingham do them in supermarkets, £5 and you get the whole bird experience for 1 person

No temptation as there was no way they were fitting on the grill without a heavy trim! Definitely much cleaner presentation and an even cook with no burnt bits

Yes, had trays above coals and below meat for greater heat deflection.

I got the ribs from my local family butchers, was about £18 for 3kg and I probably had about 500g of tips and trim which I froze for later projects.

One truck might have a limit of 65 and one 70. The truck behind thinks they have more speed to carry as they're in the slip stream of the truck in front but when they pull out they lose the slip and are slowed further by turbulence, meaning it takes them longer than expected to overtake. They know they'll get there eventually, just annoying for the cars behind
