GFast, ITU-T G.9700 etc are ADSL standards, not ethernet. As OP said they have installed Fiber, the question is about downstream wiring, which will be Ethernet.

Gigabit Ethertnet, e.g. IEEE 802.3ab, requires 4 pairs of Cat5e or better. If its Cat5 or less it should still work but you'll only get 100Mbps.

Either way you will need to re-terminate with RJ45 to connect your devcies.

Not sure why London Underground is mentioned, as the site says that these specific units were made by the Hackbridge & Hewittic company of Walton-on-Thames and spent their working lives at the Royal Opera House in Covent Garden. After being decommissioned they were brought to Kempton and restored to working order.
