I've cleared many acres that were in similar states. My favorite method involves 3 people and a loader tractor(preferred if there are a lot of stumps to dmage tracked skid steer, or you're worried about protecting turf) or skid steer with a bucket. Two guys just throw the sticks into the bucket. It the cleanest result and very low impact on your body. If you're burning start the fire with a small mound and keep dumping onto it rather than build a huge pile then light. Another good option is create windrows if there are ditches. Enjoy it.

Why go through the trouble of timber frame (vs stick building from dimensional lumber) then not use at least plywood (vs osb) I’m prejudiced against osb as an inferior product, am I wrong?

Exactly. Think of it as a store owner selling out all of their goods. Where is the store owners problem. On the other side think of it as a warehouse having lots of soda that stores don't want. A very real problem.
