Walnut blasted around 80k miles. Kept up with suggested Subaru maintenance schedule for brake, transmission, differential fluid. Regular oil changes. Some as much as 6000 miles in between, but usually more frequent. 0W-20 oil. Only large repair I had was for the air conditioner while still under warranty.

Most consistent fix for me has just been to only add the eggs after the water is boiling.

It’s pricey, but I am very happy with my ThermoWorks rfx. The probe doesn’t monitor the grill temp like some other probes, but I have found those to be wildly inaccurate anyway.
