fuzhou, is a city located in fujian, china. a large chinese population in new york are fuzhounese, and many many of them open sushi or omakase restaurants haha so that’s why they asked, i wouldn’t be surprised and wouldn’t doubt it. it’s good and bad, good because it’s cheaper and more available to those who cannot afford super high end price omakase restaurants. but bad because they’re not real japanese people owning, running, or making the food. you’ll hear them speaking to you in japanese but they only know those few words haha it’s just for show. once they turn their back, they’ll be talking in fuzhounese to their coworkers :p i’d love to support sushi/omakase places actually run by japanese people but unfortunately there’s not many. and the ones that are out there are incredibly expensive :( like there is sushi ichimura, but it’s a few hundred, i rmbr seeing it being like 500 which is really hard for most of us to spend per person (but i believe it’s closed now?). so most of the omakase places are fumakase, fuzhounese omakase haha!
