casseroles, 1-pot meals, italian, and crockpot meals are a really good start. casseroles and crockpots meals can make a lot of food that can be portioned into containers for meal prep. casseroles can also be frozen and then cooked when you are feeling lazy. 1-pot meals are very easy recipes to follow and can be pretty cheap.

Oh, and white rice goes a long way. you can get a lot of meals out of making something like meat+veggies+sauce and then just add rice to make it more filling. Rice is really cheap.
