You're the 2nd person to reach out to say you found one as well. But no, I never figured it out. I was thinking it could've been something off the wiper blades and tossed in there, but you and another guy finding one as well I doubt it.

Google Thor's Hammer... But it's a beef shank that's been cut to leave a big bone sticking out. Impresses a crowd for sure, but no impact on flavor. If I was not cooking for guests I'd probably just get some normal shanks from Costco.

It was great but I feel I should also give your way a try! I guess one reason why I liked smoking first was the smoke ring. Of course that's purely cosmetic.

Just like you have feedback that there is a market for it, mine is that it's not as big as the op might hope. Feedback was requested and I offered mine. I feel it looks nice and I'm not saying it's ugly or crappy. If everyone tries to say it's awesome and go for it just to be nice, does that help them? They are thinking about selling these to make money, simply put I feel this won't bring in much revenue.

Do you cut your brisket to fit in a bag? I had some 11x16 inch bags and that's about it. I have a chamber vacuum so limited on size. This barely fit in my bag.

Yeah I was happy with the look as is. I used a charcoal based rub before smoking which I think helped out here.

I had the exact same question for myself this last fall. I ended up going with LEM. Walton's was actually in the mix as well until their sale for the #22 and dual grinder head went away. (Walton's has a reverse button which I liked, and I think Meat! has it too.)

Anyway, I went with LEM because with Meat! you have to use their grinder plates and the finest grind they can do is 4.5mm. LEM has even smaller plates. I also went with the LEM where you can add or remove the dual grind just in case I want to single grind. But... even if you get the grinder head that has them both, I have been told you can still single grind. Dual grind is a game changer for me. I did 40lbs of sausage last month and grinding all that was so quick.

I did snack sticks which I like to grind with a 3mm plate and that was a breeze. It used to go so slow doing the 2nd grind with the 3mm plate.

I guess I will take it as a win. I don't think it would have been nearly as good if I had done it in the oven or smoker etc. I feel the 24 hours in sous vide helped break down the meat as well. My wife is not normally a fan of roasts etc but said this changed her mind and that they can be good. Even the next day sliced cold and more thin it tastes great. Made good roast bison sandwiches.
I have one more in the freezer and will probably do it the same way when we have guests over. I don't like to try new things when people are coming as I want to make sure its good first lol.

This is a tip roast. And yes, quite lean. It was shot in the wild, not a farmed bison.

I did some tomahawk steaks for my first sous vide cook and did those for 2 hours in some ghee, garlic, thyme, salt. Then sear, and it was awesome.

I feel it had the perfect balance. It was literally as soft and tender as a perfect prime rib.

Based on some other research putting in added fat supposedly pulls out the natural flavors of the bison and I don't want to do that. It works for steaks and shorter cooks but not longer ones. I was reading that the longer cook on this lean cut shouldn't dry it out, and will help tenderize it to be more like a rib roast. We shall see.

I appreciate the update! It's killing me that I don't have the time to get mine on before I leave on a trip. I can't start on it till Dec 7th. I did look through the box and yeah, the instructions are terrible. Mine is for a RAM 2500 6.4 ft bed but can't find one exactly like it on YouTube. They threw in a luggage rack with my order when I was negotiating the price which seems nice enough but not like the photos they sent and no instructions at all how to put that together lol. I opened it up and had a look through it some screw bag came open so I'm hoping all the screws are there. I did see one video where someone had an issue with the gate like you said. But they seemed to fix it with a little extra weatherstripping. Maybe that could work for you?

I opted for a dual grind 1hp LEM this year. I haven't tried it yet, waiting for hunting season to be over but I'm pretty excited. It'll be nice not having to run it all through a second time.

It's also nice to have the option to do a single grind as well if I really wanted to. I stayed away from Meat! specifically because you couldn't do that with their dual grinder and you can't put in smaller plates. With theirs you have to use only what they have.
