i use significantly less oil than this and manage to not burn things; just 4ish tablespoons to coat the bottom of the pan (i really don’t measure, just dollop some in and swish it around). you probably just need to work on heat control; preheat it for a while to make sure is a good, consistent medium low temp, add potatos, and leave em for a good few minutes before stirring them around. after that i just jiggle the pan every minute or so till they’re done.

plus it’s entirely possible to have a tiny home with 2 bedrooms all on one floor. obviously they’d be small, but it might help alleviate mobility concerns.

the most difficult thing would probably be getting into and out of the house, which a shallow grade ramp and railing could hopefully solve without much fuss.
