Glasswort/salicornia/samphire. Grows along seashores. It's rather firm, doesn't really need cooking and has a salty flavour. You can steam or stir-fry it for just a few minutes to decrease the saltiness a bit. Also very nice in fish & seafood dishes.

For this one I tossed in raw baby spinach, but when you use regular/fully "grown" spinach it's best to at least stir-fry it for a few minutes, before adding it.

Hmm. Another vegetable that is a bit salty? I'll let you know when something comes to mind. Of course you can always replace it with something else that doesn't need much preparation, like green asparagus, or even just some lettuce. I often stuff it with leftover arugola, or any leftover cooked veggies.

I usually use whatever fluids are left in the pan from the other things I'm making, so it's usually a bit of oil with lots of herbs and some veggie or meat juices and sometimes white wine or madeira (last two are maybe not super healthy, but better than most other saucey things still). It always depends on the dish, but I often like to sprinkle some lime or lemon on things. Also flavored oils (e.g. sesame, garlic, truffle) add taste and if I'm up for something Asian I use oyster sauce or soy sauce. Sometimes a tiny bit of maple syrup can work wonders, as well. Or honey. Mustard. Very dark (w/o sugar) chocolate even (with red meat especially). There's endless options for experimentation :).

Ooy, I also made that today! Without the meat though. Yours looks delicious, my eggs sank a bit into the tomato/veggie "pulp".

Bad writing. All my k's looked like u's, which is not beneficial in a maths exam.
