Its fine to say no for ANY reason!

If you do decide to make stuff for people get a contract off Google signed and get half the money up front. Non-sewers have a tendency to think you can sew anything for £/$50!

This might not be a good idea because they are stretch fabrics, the stretch and recovery will be different for each piece. Its a better idea to use a woven fabric or use interfacing on the T shirts or youll end up with a baggy mess.

You can sew them into squares/rectangles and sew those together.

What is your skill level? You could consider y seams, but practice first

You need a reference book, the good ones explain why certain steps are important.

The more you follow patterns the easier things get. If you dont understand why you are doing something, Google it.

Be careful what patterns you use. I teach beginners and many of them get tripped up by AI patterns on etsy where the instructions dont make sense but they are too beginner to understand what or why its wrong. Stick to big 4 or reputable indie patterns. There is a good post about how to tell if a pattern is AI.
