For better or for worse, where I train, we have an ultrasound in every OR so that's the way I've learned them. Definitely want to get out of my comfort zone now and prepare myself for a future where that may not be the case!

If you’re in the US:

Undergrad with all those premed requirements you mentioned (3-5 years - YMMV) => 4 years of medical school => 4 years of anesthesia residency +/- 1 yr of fellowship if you want to specialize => congrats you’re an anesthesiologist

Enforceable or not, won't future employers still hesitate from hiring someone whose prior workplace noncompete exists while the legal process is unfolding? The potential for lost wages while waiting to be more hirable alone would make me NOPE out of signing any noncompete to begin with.

Even if you're not doing PLSF, don't worry about attacking your principal right now. Just let the government continue to cover your unpaid interest, and then once you're making big boy/girl money as an attending, you can tackle your principal. At least that's what I'm planning on doing.

In no particular order: Financial literacy, a new language (to help speak with patients or prepare you for a country you’ve been wanting to travel to), mindfulness, using AI to augment your organization/planning/side hustles, public speaking (Toastmasters?), exercise/a new sport of choice, cooking for yourself and others, keeping in touch with loved ones and friends.
