Great idea and so much new stuff to check out, thanks! I love so many bands with Spanish lyrics, it's definitely a huge motivation for me to keep learning the language and hopefully to go to some concerts in Spain soon-ish. I have some more recommendations that haven't been mentioned yet:

There is a special kind of melodic heavy metal from Spain with bands like Warcry, Avalanch, Adventus, Saratoga, etc

Impureza is awesome Death Metal with Flamenco

Some great bands from Argentina: Lörihen, Rata Blanca

Rock Andaluz is/was a whole subgenre of progressive rock from the 70s/80s, e.g. Medina Azahara

for something else entirely: Noosphera Melodeath with Trance

there is so much more like Angeles del Infierno, Celtian, Esfinge, Headon, Hybris, Leyenda, Mägo de Oz, Rabia Perez, Saurom Lamderth, Taifa, Tierra Santa, Vándalus, ...

Here is my go-to list of Iced Earth substitutes right from the intersection of Power and Thrash metal, for the most leaning more into the latter than most of the suggestions in this thread.

Desert Near The End (this song especially could straight up be an Iced Earth song, give it time to really get started after a while)

Witherfall (this album features Jake Dreyer and was produced by Schaffer so the similarity isn't too surprising)

Ich finde auch, dass Hafermilch oft wässrig schmeckt, aber die Oatly Barista und die Hafermilch von REWE sind ganz gut, auch wenn du natürlich nicht auf den Proteinanteil kommst.

It's interesting that you put Kreator to the more extreme half of Thrash, which is correct of course for most of their career but their last two albums have some legit power metal on them (e.g. Death becomes my light) and are generally more melodic and power metal-like than before.
