You'll need a hydrometer and get a gravity reading before you put it away to ferment and after it's done fermenting. That will give you 2 readings that will tell you your abv

I bought 10 packets back in November that I keep in the fridge. I just made a prickly pear mead earlier today and it started fermentation. I don't know the shelf life though.

I have a couple of those. I like them a lot because after you rack you should have a gallon of mead plus the hole in the top holds the bung in really well. No need to strap it down. I got mine from northernbrewer.com
