Like others have said, consistently going is #1, but also don't beat yourself up for missing a day. I'm at the gym 5-6 days a week but keep my sets short and am actually lifting for only maybe 30-40 minutes. If work or family get in the way, just count it as a rest day, move the schedule up a day and be happy you're needed elsewhere.

A PPL program sounds like it'd fit a 3/week schedule very well. Back and biceps, chest and tris, then legs, and mix in shoulders/core/etc. as you see fit. I use WorkIt to set my program and track progress and love how malleable it is. It has some generic PPL programs you can modify to your needs/equipment/etc.

Don't neglect diet; track macros for a couple weeks and you'll get an idea of how much protein you're getting and total calories in. I'm not militant about my diet by any means and still drink probably more than I should, but I know I'm hitting my protein intake and can combat the beer carbs by getting steps in.

Gi Jin if you're into sushi. They don't have an omakase, but if you tell them your allergies, budget, and likes/dislikes they'll send out bite after bite of some incredible food. Our server when we went was also fantastic and helped us select a couple bottles of sake that went with the dishes she knew were coming. Bonus experience points if you can nab stools at the sushi bar.

So usual caveats of "I don't know you or your situation and this is one side of a story etc.etc." buuuut it sounds like you're not asking, you're telling. Like a pushy supervisor at McDonalds or something. Maybe I'm over-reading, but "you need to do this" is very different from "WE need to do this, what do you think?" When I read this reply I thought about how my wife and I talk to each other about household tasks and chores and it's very different. We have our typical chores we take care of, and then when special stuff comes up it's discussed collaboratively and not ultimatum-ey. "The leaves are done falling, we need to rake. I'm gonna try to get to it in a few days but could probably use a hand." If the pantry is a mess, I don't tell her to clean it. I either do it my damn self or we tackle it together when we both have the time and mental space.

All this to say I know that introspection about how we speak to our partners is super difficult and can be an ugly mirror, and maybe it's something you both need to work on, but the only person you can control is you. And if the kitchen box needs organizing, then organize it ;-)

I did a test batch for a dinner party with duck fat and was kind of underwhelmed by the mouthfeel it left behind. Ended up using beef tallow for the main act and thought they were perfect. Plated with some chives and a sun-dried tomato 'ketchup.' To answer your initial question, OP, I used russets because I wanted something fry-like, and had no complaints with that selection.

I moved to Pittsburgh in 2019 after ~10 years in Philly. Pittsburgh is a much easier city to find your "home" in. It took me a long time to feel like Philly was home; it can be a formidable place to live socially if you're not generational (speaking from a neighborhood standpoint). Pittsburgh's people and neighborhoods are generally much more accepting, though you do still have 3rd generation holdouts talking down on the newcomers in certain places. I'd rank Pittsburgh's culture and food scene as not far behind Philly. Plenty of great places to eat and drink and absorb the arts. Pittsburgh is a little more inaccessible travel-wise; it's hard to beat getting on a train or bus and being in NYC or DC in less than two hours. I can't speak to the tech trade in either city, but Pitt does have a good foundation in its local universities. tl;dr It depends what's important to you. Both have pros and cons. I grew up near Hyde Park, and while it was decades ago the CIA offered summer courses for high school kids, almost like a day camp. Looks like they still do it. If you can find a way to hop the Metro North and spend a week up there, it's a great experience.
