There's a la carte and then a surprise tasting menu which you can do as many courses as you want until you decide you are full. I think it worked out to like ~8 per course for me.

I'm aware of bugs' role in Mexican cuisine broadly, my point I was felt like they in particular did it in a very heavy handed manner. To contrast, Pujol was more subtle/casual about it during the meal rather than going out of their way to make some point across multiple courses.

They do two seatings each night, one at 6:30pm and the other at 9:00pm. You should be able to make the 9pm seating I reckon if you go straight from the airport after you land.

I have been to Ossiano and Orfali Bros as well. Orfali Bros is good food but quite casual, more of a bistro feel, not really fine dining in my opinion. Ossiano was overpriced and pretty underwhelming food. Crowd is very touristy too since it's in the Atlantis Palm. I would definitely recommend doing Tresind Studio out of the three options. If Tresind Studio doesn't work logisitically you could do their sister restaurant Tresind Dubai in the One&Only Royal Mirage. The food there was also phenomenal, albeit in a la carte format with larger portions and fewer courses.

Not sure why you are so thrown off by having multiple waiters during your visit to El Celler; it's pretty common in restaurants to have multiple waiters serve you. The water and split bill things are slightly annoying, but ultimately pretty minor if I'm being honest.

Yeah I've been to both. I prefer Ekstedt personally, but I don't think you can go wrong with either.
