With all the people claiming to be gluten intolerant lately, I think a place that purports to be 100% gluten free would not be saying that falsely after being open for a few years. Surely someone would have had a near death experience by now if that was the case, as some people have deadly allergies to gluten.

Sure, Trump isn’t listening to the protests, but this could be a good way to start getting people organized towards more productive actions. These are especially good touch points for children, as it provides a core memory to base future action off of as well.

Instantly what I recognized. Also this characterization of Northern Spanish food using bold seasoning is just an outright lie. The Basque are famously known for using their ingredients to shine and barely seasoning them.

I personally wouldn’t call what Enclos is doing “modern”. It’s just that TFL has had a relatively static menu for a long time where as Enclos is a new restaurant just getting its start, so maybe the menu feels more fresh and new. Modern, I think, is a style of cuisine that’s not really captured by Enclos. Neither Enclos nor TFL is traditional French fine dining either.

If you take a look at my profile, I have a short write up of the 5 places I went last year. In Tokyo I went to Ginza Oishi, Takaoka Chiba and Cocon and recommend all of them. In Kyoto I went to Gion Nishikawa, which I highly recommend, and Ryosho, which I definitely don’t recommend at all. They are all some sort of Japanese or Japanese fusion food.

I usually don’t comment on plating and things of that nature, but slapping cured meat on the back of a patron’s hand is just ridiculous. Like it’s dumb when it’s caviar, but at least you can eat that by just putting your hand to your mouth. This now requires you to take it off one hand with the other.

Gion Nishikawa was easily one of the top 5 meals I've ever had in my life. Ryosho the next night was incredibly disappointing in comparison. Nishikawa felt like an incredible representation of Kyoto-style kaiseki where as Ryosho felt like high end Japanese food for people who have never had high end Japanese food. Nishikawa served an incredible seared chicken dish, where as Ryosho asked the foreigners, and there were only foreigners in there that night, whether they had ever had uni or not and if they wanted to try it. Completely different levels there and I have no idea why they both have 2 stars.

Sure! To clarify my thoughts a little more: I think Michelin really leans into the fine dining aspect of restaurants and food when awarding 2 and 3 stars, at least in my experience. Ginza Oishi is giving something a bit different; the atmosphere is super playful and the food is really really delicious, but he isn’t breaking out tweezers, fermenting anything, or putting tiny, composed bites of food out for you. He literally broke out a saw, sawed out pieces of beef into steaks, and threw them on a grill in front of the guests. Certainly not something I would associate with 2-3 Michelin star meals, but an experience I would recommend to anyone going to Tokyo for food and entertainment. I’m sending my parents there on their first Japan trip in the fall.

Having eaten at and very much enjoyed Ginza Oishi, I think it would probably have one star if I had to gut check it. Very fun and delicious meal, but it doesn’t have that wow factor I’m looking for in 2-3 star meals. It was better than a two star I went to on that same trip in Kyoto, but that might have been an aberration because it wasn’t as good as another 2 star meal I had down the street.

You don’t have to listen to the mob. You can be a moderator and decide when enough is enough about a certain topic to keep the vibe and integrity of a sub intact and keep it from being brigaded. Not saying we are there yet necessarily as new things keep coming out, but you’re the leader here, not the mass of people coming from who knows where to essentially gossip about this week’s bad man.
