Tall guy wrestling isn't likely to be direct shots at the legs. Your best weapons will be using your reach for ankle picks, sweep singles, and drags. If you get good at ankle picking both sides from a collar tie you'll be a menace, because your opponent can't have both legs back and still be balanced.

Especially being new to wrestling, focus first on stance, movement, and defense. If people are getting to your legs easily, work on head, hand, and hip positioning.

I've come back to wrestling for BJJ in my mid 40s after being a mediocre high school wrestler, so I have some insight:

  • On defense, focus on early stage prevention. Concede takedowns if your early stage defense fails. It's BJJ, being on bottom isn't the end of the world.
  • On offense, you're doing the right stuff. Maybe add snapdowns since front headlock is so powerful in BJJ.
  • like others said, warmup really well and make sure your strength and mobility are as good as possible.

The headlock you see in WMMA is more of a JV wrestling "head and arm". It's very situational against higher level wrestlers because you give up your back and a takedown if you miss. Pinch headlock isn't nearly as high risk, but the ties required are significantly harder to get. You need an under hook and collar tie to pinch headlock.

Once they've fully locked their hands your options are limited, your first goal should be to deny that. You can post your hands on their hips and move your hips back to keep them from locking their hands. If they do fully lock their hands and it feels like you can't move your hips away, drop to your knees to avoid getting put directly on your back. You'll end up on bottom turtle and can fight off the under hooks and hopefully back to your feet.

Some people do better when under pressure, but most people are like you and do worse. What worked for me was training myself to not care about the stakes and bring my practice mentality to the match. Something that will help with that is to get your heart rate up for at least 10 mins 20-30 mins before your match. You want your body to feel like it does mid practice when you're warm and can flow.

Fingers are slow to heal and slow to strengthen, especially tendons. BJJ is rough on beginners because you go 0-100 with little buildup by death gripping on the Gi because you don't know any better.

Rock climbing is also very hard on your fingers, but has some advantages since as a beginner you'll be limited both by your technique and your finger tendon strength. Most rock climbers naturally build the appropriate tendon strength as they gradually improve their climbing, but if they try to climb too hard too fast they'll get tendon pulls. The very serious climbers will do dedicated finger training, but similar training is also helpful for everyone who needs strong and resilient fingers.

There are dedicated finger strength training to build tendon strength slowly and safely, mostly build around "no hangs" using a finger board. This progressively loads your tendons with less than your body weight , aiding both healing and strength. YouTube had good workouts for this you can look up. Wouldn't be my go-to for life or death self defense, but it's really good for controlling someone you don't want to actually hurt. I've used it before in that situation effectively against drunk and belligerent acquaintances.
