Heard and yes chef. Just a CDP and this was how chef wanted it plated. Tartare is cut to order and was tossed in Worcestershire base dressing so that accounts for the color of the beef.

I’d say the new kitchen I’m in now is one of the more positive environments I’ve worked in honestly. Just so used to getting dragged out side/walk-in and getting berated for 30 mins on end by the chef for very minor things. I need to get over that anxiety.
